Semi-processed Novara rice!

The “Novara” rice variety was born in 1930 from the meeting of two historic cultivars: Lady Wright and Nero Vialone.

Able to compete admirably with commensal rice plants, well before the arrival of herbicides, thanks to its growth habit and leaf vigor; unfortunately, rice growers soon stopped growing this delicious rice because of its long pink "whiskers" (arista), which made harvesting and threshing difficult.

"Novara" rice was recovered and reintroduced into the Una Garlanda catalog field in 2018. Since then, every year we have "multiplied" it and preserved its precious genetic heritage in the fields, keeping it alive. Today, its small, elongated grains become your "Biodiverso" risotto, rediscovering the unique beauty contained in the diversity that surrounds us.
